These are not meals but I use it for grinding wheat berries and barley into flour. I have made almond milk, coconut milk and nut butters.

Cherry Chocolate "Ice-cream"/Smoothie

1/2 cup almond milk
1cup Spinach
11/2 cups frozen Cherries
1 TBSP Cocoa Powder (I use 100% Special Dark Chocolate)
4 dates

Can add ice to make it more "ice cream" like

I made all of my son's baby food in it. I also make a quick tomato sauce in it. It takes less time to make and warm then to boil the water and cook the pasta. I take a couple of tomatoes cut into quarters(I don't peel them), garlic, basil and oregano to taste. Put some EVOO in a pan and dump the sauce in. Heat until warm. My son loves it (we do to) and it is quick and easy.

Well this is a sweet treat, but we love making Frozen Hot chocolate in ours right now.

A little bit of ice, some water or milk, and some hot chocolate powder (we like the Stephen's peppermint variety). Mix it all up, then pour it into glasses, put whipped cream and chocolate shavings on top.

We just got our Vitamix a couple of months ago, and have used it often for green smoothies and making oat-flour from oatmeal. I'd love to start making some meals in it too, but we have quite a few food allergies to work around so that's been tricky.

We love making "orange sherbert" in the Vitamix with 2 peeled oranges and 2-3 cups of ice (we sometimes add a spoonful of sugar if the oranges aren't as sweet as they normally are).

We do what we call a Dirty Juice Every Morning. I always want everyone to get a good serving of fruits and veggies no matter what. It can be adjusted to accommodate your likes. But we throw in the following:

2 Handfuls of Greens (Spinach/Kale)
1 Apple or Pear
1/3 wedge lemon
Handful Frozen Strawberries
Handful Frozen Blueberries
Handful Frozen Mango or Peaches
And then add 1 cup of water or coconut milk, or juice and blend. Whatever is left over goes into a Popsicle holder for the kids to snack on later.
Also you can add Chia Seeds (1 tbsp serving per individual) for protein and omega's or Flax.

We also throw in cauliflower, broccoli, cabbage, raspberries, melon, etc and it all works. Whatever is left over. My general rule is 1 veggie serving to 1 fruit.

The other one we do is an Avocado Smoothie:

2 Avacado's
2 Banana's
2 handful's blueberries
2 large spoonfuls of plain yogurt

Mix - It is like a pudding. Some people will take out the blueberries and add cocoa and make a chocolate pudding which is a yummy treat.

These are our staples.

Bumping this up with a few recipes I've made up for summer. They're all keepers.



Cherry Cheesecake Freeze

3/4 c pitted sweet cherries (thawed, if frozen)
1/2 c sugar or sugar substitute
4 oz cream cheese or Neufchâtel cheese
4 c ice cubes

Put ingredients in pitcher in order listed. Turn to variable 1, then increase to 10, then switch to High. Use tamper to press ingredients into blades until four mounds form.




Cherry Limeade Sorbet

1 orange, peeled and halved
2 limes, peeled (can use 4 limes instead of 2 limes and an orange...I only had two limes at the time so I added an orange)
4 Tbsp sugar or sweetener
3/4 cup pitted cherries
4 cups ice

Place all ingredients in blender pitcher, turn on to Variable 1, increase quickly to 10, switch to High, use tamper until the four mounds form.




Lime Pie Sorbet (this is NOT a "diet" recipe, lol)

3 limes, peeled
1/2 tsp lime zest
1/2 14-oz can sweetened condensed milk
4 cups ice cubes

Put all ingredients in blender, start on Variable 1, increase to 10, switch to High. Blend until sound changes and four mounds form.
