Favorite make ahead/hold over vegetarian meals?
For the next month and a half I have to pick up my oldest from soccer practice at 5pm every week night. That is our usual dinner time, so we will be pushing dinner back until 6pm. It takes us 20-25 minutes to get home and practice never ends on time.
Anyone have any good ideas for meals I can have ready to heat and eat or in the crockpot? My oldest gal is very picky but I have some quick go to plans for her and often have a leftover she will eat. Everyone else is pretty good with food. I have to stop just grabbing dinner for everyone on the way home and leaving hubby to fend for himself. ![]() Thanks.

Chili! Or taco night! You could prepare all the taco fixings in the morning and either cook beans in the crock pot or heat them quickly when you get home.

I find preparing/chopping all veggies for a meal is a real time saver. Some come together in 15 minutes or less when everything else is prepped. Can you prep before you pick up?

I like to make big batches of bean-and-veggie soups and then freeze them in one- or two-size servings.
Bean burritos can also be assembled in big batches, frozen, and then heated up. If you chop and saute some bell peppers and onions ahead of time, you can make quesadillas in a pan in minutes (we add canned black beans a little cheese to ours). |

i 2nd this! there is a really great crock pot lasagna recipe on here somewhere, that you could very easily omit the beef out of and add more veggies and cheese to bulk it up. So easy in the crock pot and soooo good!!!!
ETA: if you cant find the recipe on here, im sure you can google crock pot lasagna and tweet it to make it veggie dang it... now I want that LOL!

Quesadillas go together quick or can be reaheated.
Baked potato bar ... potatoes could be done ahead of time and just reheated with toppings (broccoli, cheese, sour cream etc).
