Who loves baking?

Oh I LOVE baking. The whole process, for measuring to decorating and seeing the final product And it has to be from scratch plus I love giving food as gifts that others can enjoy.

I also love to bake. Simple things like cookies and cupcakes mainly. :-)

I love baking too! It's a fun thing to do with the kids. They love helping, and often I'll send them over with treats for our neighbors. They really enjoy that too.

Just baked some awesome semi guilt free brownies!
Shred a med sized zucchini, I peeled it first. And squeeze all the excess liquid out of it over a bowl. Reserve liquid.
To the zucchini add an egg. Mix well.
Add dry brownie mix.
Stir stir stir...add reserved zucchini liquid and stir stir stir.
Keep an eye on consistency and add a tablespoon at a time of milk til reaches proper batter consistency. Mine took about 2-3 T milk. The zucchini liquid in mine measure like 1/8 c.
That's it!
I then lined a cupcake pan and it made exactly 12 brownie cupcakes.
So moist.
Can't taste the zucchini
So chocolates.
And almost fat free (just that one egg! No oil! And I used 1% milk)

These sound really good! I don't normally keep brownie mix in hand but might get some to make these :-)

I bake pretty regularly. I'm under the weather right now, but as soon as I feel up to it I'll be making these, a childhood favorite:



Venetian cookies, aka Rainbow cookies.

No child grew up in the Tri-state without downing a few of these. I'm so excited to try making them. I have all-natural India Tree dye so no guilt.

I baked pumpkin chocolate chip muffins yesterday, and shared half the recipe with our neighbors who just had a new baby. Today, I baked bread for sandwiches. Tomorrow, I will bake chocolate chip cookies for my DS's homeschool class, which is having a special lunch.
