So how do you clean it without water after spaghetti or gravy, etc? We have always used water after foods like that and no problems here

Re: How to season cast iron?
I have a griddle that stays on my stove top. I use it ALL THE TIME. When it gets dirty, I just hold it over my stove/sink and use a dry rag to brush all the crumbs off and put it back on my stove (I never cook meat on this pan. DH is vegetarian, I have other pans that meat gets cooked in on the rare occasion that I'm cooking meat). I have a huge cast iron frying pan, though, that gets washed with soap and water when I cook frittata in it (scrambled eggs always stick super bad, mostly to the sides). It gets dried in the warm oven so it doesn't rust, and it NEVER sits in water (my mom tried that when she was *helping* me when I had my first baby. Since then, I never let my cast iron sit around so company tries to clean it!). My DH has a griddle out on the cook stove, and he only ever cleans that with salt and paper towels and oil. So there you go, 3 different pans, 3 different methods of cleaning, but it works for us!

Re: How to season cast iron?
Do any of you get black flakey things coming off the cast iron? Even after a good scrubbing the seem to come off. Is that just the old oil?

Why is water a nono? I user water always. If stuff sticks I boil it. I never use soap though since out won't rinse away. Then I use water and a good scrub brush.

My grandmother never used water unless she went time between use. I use mine daily. I scrap clean, wipe the oil. If I ever use water for whatever random reason, I immediately cook it again and oil. But it's rare. It's how I raised to do it. Lol

Re: How to season cast iron?
we scrub with water, but oil/bacon grease from the freezer right after on the stove (after a light dry and putting back on the burner)
or shove it in the oven if it was just turned off.
