pinning prefolds does have a learning curve, but trifolding was always a lot easier for us than pockets, because you don't have to unstuff them when they are gross. I would go with:

a flip organic day pack and
either another cover and 3pack inserts
or a bummis large tote (my fave pail liner/wet bag) and a dozen flannel wipes.

both come in a little under $100, and cottonbabies has no shipping, so you could get a cute basket at the dollar store for gifting it in that would double as storage.
