Get, "Don't Panic: Dinner's in the Freezer" and "Don't Panic: More Dinners in the Freezer." Best cookbooks for this! I had 6 weeks of meals ready for my last baby in no time at all!

I prep parts of meals and that helps too. For example, freeze baggies of shredded cheese, diced onions, ground beef Italian or Mexican flavored, rice, precooked beans, etc. I have found this to be the biggest help.

Do any of those freezer books have a good vegetarian section? I would like to buy one of them, but really prefer vegetarian, perhaps someone could thumb through and list some of the veggie recipes?

Hmm I will have to check those books out maybe. Looking to find other things besides soups with beans & anything red sauce.
