I'd like to start making more of the bread we eat, since we go through SO much of it in a week. I love the artisan bread recipes, but I also need something that is good for sandwiches, without the crunchy crust - my 6-year-old won't eat bread that is too chewy or crunchy. Any good recipes for something with a nice, soft crust? (I don't have any allergy requirements - doesn't have to be gluten-free or anything like that.)

But we just tried this one today http://bakingbites.com/2011/02/no-kn...andwich-bread/ . I was actually just coming on here to share this one. its very simple like the artisan bread. The crust has a little crunch but its not super crunchy or chewy. The texture was nice and fluffy. I made it as is this time, next time I would start sub more whole wheat in to see how much I can get away with.

Thank you! I'll have to try those, especially the no-knead one. I'm all for any bread recipe that doesn't require kneading!
