Honey Bourbon Crock Pot Chicken

Ingredients
1 lb. boneless, skinless chicken thighs
salt and pepper
½ cup diced onion
1 cup of honey
½ cup low sodium soy sauce
¼ cup ketchup
2 Tbsp. canola oil
2 cloves of garlic, minced
¼ tsp. red pepper flakes
1-2 Tbsp cornstarch
hot rice
sesame seeds, optional
Instructions
Salt and pepper chicken and place in your slow cooker.
Place onion on top of chicken.
In a medium sized bowl, combine honey, soy sauce, ketchup, oil, garlic, and red pepper flakes. Pour mixture over the chicken in the crockpot.
Cook on low for 3-4 hours
Remove chicken from crock pot and slice into strips.
In a small bowl, combine 1 Tbsp cornstarch with 1 Tbsp water. Pour into sauce remaining in the crock pot and stir to combine. If sauce is not thick enough repeat with another Tbsp of the cornstarch/water.
Place the chicken back in the sauce and stir around to recoat the chicken in the sauce.
Serve over cooked rice and sprinkle some sesame seeds on top (optional).

Last night we had boneless skinless breasts cooked in the crockpot with one regular can of diced tomatoes, one can of tomato soup, and one can of water. Salt, pepper, and generous with basil (sorry, I never measure seasonings

). Once it was cooked I added about 1/4 cup of heavy cream to thicken the soup. I melted an Italian blend shredded cheese on the breasts and the rest made a nice thick soup. It was simple and delicious.

There are lots of super easy chicken crock pot recipes in this list. I am going to make this for the freezer and make my own seasoning mixes. But they should work well for super fast throw it in the crockpot as well since none of them require any veggie prep. And i know its not chicken but the BBQ pork ribs on this list are seriously amazing. I have not met a person yet that has made it or eaten it that didn't love it. My in laws request the BBQ every time they are in town.

Mom to a girl - 5, a boy - 3, and Baby - 1 ISO squishy nighttime fitteds, but I could also be tempted by knit or crocheted wool (longies or hats for my baldie) or anything sock monkey.
