Homemade yogurt whey question!
Can I use this whey to make ricotta? Has anyone tried? I have a ton of whey to use up!!!

I had the same question about a month ago, and decided to try- it doesn't work :-(
RIcotta can be made from the whey left from making cheese, but when we heat it up high enough to make yogurt, it denatures so many of the proteins (or something to that effect!) that there isn't enough left to make curd. Making cheese you don't heat it up as high. At least that's what I remember. Could be wrong- but I do know it doesn't work :-) |
