Favorite feta recipes?

When I could eat pasta(lol!) i loved pasta with a good hearty tomato/spaghetti sauce and then feta on top.

The best is penne, and tomato sauce cooked with sausage, peppers and onions, I then toss that together and bake, then sprinkle all the plates with tons of feta. yumm!

I also make a salad with fresh watermelon, greens, onions, balsamic dressing and goat cheese, but feta would be a fine alternative!

I like it mixed into my scrambled eggs with a little pepper.

Ohh! We have spaghetti and lasagna on the menu already! I'll throw it in there I think!

Omelets

Roasted eggplant hot out of the oven, with fresh tomato and feta added in

Garden salad with olives and feta

Pastina with a few chopped canned tomatoes and feta

In quiche - I am not a real recipe person with quiche
Scrambled eggs with veggies and feta

Mediterranean Flatbread

Pizza crust with basil olive oil brushed on
Topped with heirloom tomato slices, avocado slices, red onion thin slices, olive slices, capers, and then topped with feta. Bake at 500 degrees for around 12 mins. Let me know if you need an easy pizza crust recipe. We make this all the time and it's on our menu for tomorrow night

It's also wonderful on a burger that is a mix of ground lamb and beef

Tomato tart, flat bread or puff pastry topped with olive oil, tomato, feta and basil

Feta and tomato omelets

Zucchini and feta, cut zucchini in half width wise and then length wise then cut into super thin slices. Toss into a frying pan with a bit of olive oil and saute with salt and pepper. Remove from heat and immediately top with feta.

Honestly I will put feta on almost anything. I love hummus and feta on a pita for lunch or a nice tortilla or flatbread with beans, zucchini and feta heated under the broiler. And now I need to buy feta...

Yes! Spanakopita! Love it.

Or, garlic feta spread. Put about a cup of feta in the food processor with 1-2 cloves of garlic and a tablespoon of lemon juice. Start the food processor and slowly drizzle in olive oil until its soft and spreadable. Use as a dip with veggies, a spread on sandwiches or wraps, or on turkey burgers. Yummy!

ETA: ooh, or thaw a sheet of puff pastry and unroll it. Cover sheet with thawed chopped spinach and crumbled feta (add minced sun dried tomatoes too if you have them). Roll tightly like a cinnamon roll, wrap in plastic wrap and refrigerate an hour or two to firm up. Preheat oven to 375. Slice roll into 1/2 inch slices. Place slices on sheet pans and bake about 10 minutes until golden brown.

Sounds fantastic! Maybe I'll throw some dough in the bread maker this morning.
