New Idea For Beets?
I am craaaaaving Beets daily and my husband is offically sick of them. Any ideas for sneaking them into meals?

How do you cook yours? Myself and 4 of my kiddos LOVE Beets and oldest dd and dh don't like them at all. I still make them frequently.
I drain juice into saucepan ~ add sugar and vinegar, bring to boil. Add cornstarch to thicken (sometimes I don't thicken ~ they are wonderful without thickening, if you put them back in fridge to cool and be eaten cold) ~ once thickened, add beets, turn heat down and let beets warm up. YUMMY!!!

Beet risotto (turns bright red so there is no real hiding them). I put them in salads a lot with goat cheese- yum! Add beets to your salad and omit them from your husbands-everyone is happy!
I roast for 60-90 min in the skins covered in foil. Once cooled a little, the skins slide right off. |

I'm not sure about hiding, but I have sliced beets and pears and layered them with cinnamon and a touch of butter or coconut oil in a little casserole and baked them at 350 for 45. Delicious.
Now I want some roasted beets and onions for dinner. Beets are a weakness of mine.

The only way we seem to eat beets here is pickled beets. That way I can eat as many as I want and no one else has to eat any..lol

I love juicing beets with carrots ginger apples etc! Is that an option?
Or boiled sliced thin in salad with olive oil & apple cider vinegar & Some goat cheese? |
