coconut cream
Anybody have a recipe for a dessert style cream using coconut milk? Since dd grew out of her coconut allergy

I think I found one we're going to try. http://cakecentral.com/recipe/coconu...ing-dairy-free . Not sure how well it will work since mine isn't canned so it doesn't have the clumps, but I can add more flour and/or sugar. Might be more like pudding puffs then cream puffs, but its all that I got.
I am so excited- I found a bunch coconut whipped topping recipes. DD has never had whipped topping. I can't wait to make some and put it on a fruit salad with coconut flakes- that was always a big holiday item for my family and we haven't been able to do it because of dd's allergy. Now if we could out grow the peanut... I know since she is ANA and class 6 that is not likely to happen. With the dairy we are at a good place now because she has been able to eat baked in for the last year. I am so excited - can you tell- about the coconut even if it isn't something that we really eat, its nice to have to option again.

We make a delicious chocolate mousse by placing one cup of chocolate chips in the blender (or a little cocoa powder and agave). Then empty one can of coconut milk into a small saucepan and heat until very warm. Pour the coconut milk over the chocolate in the blender, add one teaspoon of vanilla and blend. Then pour into dessert dishes and place in the refrigerator for 3-4 hours. We eat ours with fresh berries of pomegranate.

Yep. We are addicted. You can also add some peanut butter or almond butter and it's delicious. I am going to experiment in the summer with making it into a gelato or ice-cream with my ice-cream freezer.

Also I've been wondering about how to make a non-chocolate version, but I haven't come up with anything yet. If anyone figures it out, I would love to know.

I love just taking the coconut cream and putting it on fresh or frozen berries sprinkled with a little bit of dark chocolate. Really easy and yummy.

Take a can of full fat coconut milk and put it in the fridge for a few hours. When you open it you will have a thick and rich cocnut cream! Sweeten it with whatever you want (honey, sugar, etc..). You can add coco powder too. Yum!
