Whats your simple weekly menu?
I'm looking to simplify dinner every week. Just m-f would be fine. Thank you!

Mine is a little more complicated this week then usual because of school. I am in a food a culture class and we have a project of making a traditional item not of our heritage. I am actually making a couple this week because I found a lot of recipes that looked good.
Mon- french bread pizza, homemade Tues- Bruschetta, baked brie with roasted garlic and green beans- using up the extra french bread made by my recipe. Vegetarian. Wed- Garden Pasta- canned tomatoes, mushrooms, spinach and zuc tossed with pasta- vegetarian- could easily add some pepperoni or a cured meat. Thur- Pirozhki (meat pastry). Pretty simple but requires a dough be made. Its just a puffy dough filled with cooked ground beef and a few diced veggies. We're having it with roasted carrots and broc as sides. Polish recipe - I think, can't remember now Fri- baked cabbage w/ smoked sausage. Think this one is Polish too For my project I am making youvetsi (lamb and orzo) which is Greek and lemon lime syrup cake. Now for a more typical week: Mon: veggie fettuccine Alfredo (home made "diet" recipe) Tues: crock pot Tuscan beef stew Wed: Veggie lasagna (with red sauce not white) Thur: Sweet and sour Veggies over rice- no meat Fri: Hamburgers, sweet potato and carrot fries

We do freezer meals so today I am making these meals to add to what I, have in the freezer for the next two weeks. We are cleaning out the pantry and freezers (I have, two turkeys and 3 chickens.
I will make, two of most of these, meals. I, never know what day we will eat what . I just wake up and pull it out of the freezer and stock in crockpot BBQ pulled pork Turkey dinner turkey white chili chicken noodle soup chicken n dumplings beef n noodles beef stew pork chops and rice hamburger chili tacos goulosh |

I meal plan on the weekends to make my life easier through the week.
Roast chicken with veggies and potatoes Chicken enchiladas (using leftover chicken) and Mexican rice Spaghetti or some other kind of pasta dish Sandwiches I usually only cook every other night because it's just DH, me, and DD (19 mos). Most of the recipes I make are enough to feed us for 2 nights.

Nothing has a set day except for monday but this is what we will be having:
Monday: fish fillet sandwiches and mac & cheese (we have scouts so its always something fast) Meatloaf, Mashed potatoes, corn, rolls Polish Sausage, sauerkraut (for adults), mac & cheese, broccoli Chicken & Noodles, mashed potatoes, green beans Italian Sausage & Pasta Bake, garlic bread, salad Other Meals that we have a regular basis: Salmon Patties Pot Roast in Crockpot Pork Loin in Crockpot Italian Beef in Crockpot Pulled Pork in Crockpot Whole Chicken - Convection Oven has rotisserie attachment Chicken Tacos in Crockpot Beef Tacos Carnitas in Crockpot Spaghetti Baked Ravioli Feta Burgers made on indoor grill Bratwurst on indooe grill |

Here's our weeks menu:
Monday-tuna noodles and peas Tuesday-vegetable beef soup Wednesday-church Thursday-chicken and rice with broccoli Friday-lasagna with garlic bread and salad Saturday-chili and cornbread Sunday-chicken enchiladas I make what I can ahead of time. I use my rice cooker for rice and my crock pot for baked potatoes and soup. I work Monday through Thursday so I keep it pretty simple. ![]()

At least once a week, I cook a double batch of something so I can add the leftovers to my freezer stash. That gives me one or two nights a week that I can just grab a freezer meal for dinner. So typical week might look something like this:
Some kind of soup - extra big batch (either freeze half or use extras for lunches). A couple of quick dinners like Korean beef or stir fry. Something vegetarian like roasted vegetables over quinoa. One big production type meal which is usually a cheat meal - this week's was fried chicken, mashed potatoes, gravy, corn, cornbread, etc. Then I fill in anything else with meals from the freezer.
