I'm feeling uninspired
I'm trying to work on my grocery list for this week. I want to use up some of the excess stuff in my cupboards, fridge and freezer. Help me decide what to make. I have no problem grabbing an ingredient or two for a dish, I just want to use up as much as I can of what I already have. FWIW, we are minimal meat eaters.
On hand: Black beans, lentils, garbanzo beans Brown and white rices Pasta Quinoa Coconut milk Chicken breasts Firm tofu Ground turkey Ground beef Chuck roast (beef) Carrots Celery Kale Tomatoes (fresh and canned, diced) Bell peppers Cabbage (green) Stocks (veggie, chicken, and beef) Tons of herbs, spices, and pantry staples (flours, corn starch, etc) Already planning to buy: Potatoes Onions Soy sauce Eggs So, what would you make?

One of our staples and actually what I'm eating right now is turkey chili. It's just ground turkey, 2 cans tomato sauce, 1 can diced tomatoes w/juice, packet chili seasoning to taste, and you can add beans, veggies, etc to make it more hearty. The chili seasoning packet we use calls for 2 cans sauce OR 1 can tomatoes, but it was a little thick for me and by adding both it makes it go further. It's a simple weeknight dinner

I'd make Texas Hash, which is ground beef, canned tomatoes, rice, onions and peppers seasoned with chili powder.
I'd also make peanut noodles using coconut milk and tamari. Beans and rice with smoked paprika is nice. You could also make meatballs using the turkey and ground beef.

Oh and I'd slow braise the chuck in the crockpot with onions. Make shepherds pie or something with it.

I have been making this "Mexican Pie" thingamajig with ground beef, onions, tomatoes, black beans, bell peppers, and seasonings topped with pie crust. My husband really loves it, but he seems partial to anything that comes in a pie dish.
With the tofu, eggs, soy sauce, carrots, I would probably make tofu fried rice. Chicken breasts, rice, cabbage, soy sauce, I would probably make Chicken Adobo with cabbage. But that's probably because I have been craving it.

Carrot ginger soup
Carrot & Celery sticks Roasted carrots Or just mix carrots into potatoes for orange mashed potatoes Black bean soup or dip Hummus w/ garbanzo beans or roasted chickpeas Lentil chili Sauerkraut Kale chips Scrambled "eggs" with tofu Chicken pot pie w/ coconut milk Chicken nuggets Stuffed cabbage using quinoa or rice and beef |

stuffed bell peppers- with or without meat cabbage soup http://www.theriver1059.com/pages/jo...ticle=10054595 we usually do this without the chicken only uses about half a cabbage Fried veggie rice (carrots, celery, eggs, cabbage, onions, broccoli) Can throw some chicken or tofu in there. We usually do either a stove top or crock pot roast. Eat roast, with roasted potatoes and carrots first night. Then second night make barb sandwiches, shepherds pie, enchaladas, whatever strikes us. With the cabbage you could make cole slaw to go with the barb beef. grilled chicken with cabbage casserole. if your interested I put in the recipe. its pretty much just cabbage with tomatoes mixed in. Place in casserole dish top with tomato slices and bake. Can't remember the seasonings off the top of my head but its pretty good. We like this too http://vegweb.com/recipes/rice-and-cabbage-casserole . We eat it with out meat, but it could be a side to chicken or burger patties. We usually just have other sides with it. Makes a lot so we usually freeze about half of it.

I like to make a Thai curry over rice. I add coconut milk to it. Meat (chicken, ham, shrimp, leftover pork roast, whatever), garlic, curry powder, a dash or two of chili powder, smoky pepperika carrots, celery, bell pepper, onion, lime juice, coconut milk, & frozen peas (peas go in 5 minutes before I serve as I don't like them mushy).
This may not be authentic ... but that is how the Thai restaurant makes it. If I feel uninspired I think about what I want to go out and eat. Then I make that!
