Seems like I read somewhere that you need a more heavy duty stand mixer, but I don't know how true that is. Mine is a Kitchen Aid artisan 325 watts. not the most expensive but not the cheapest either. The top bounces around when its kneading. You do need a dough hook for it though. I actually prefer to knead by hand but don't have time to mess with it and the clean up so I use my mixer when I am rushed and need to spend the 10 min knead time doing something else.

Can't blame them really. I can remember waiting impatiently for my mom to tell me the bread was cool enough to eat. It would be gone before it was cool. The same would happen in my house if I let it, but unlike my mom I am making it for sandwiches and our weekly bread. My mom made it occasionally for the sole purpose of eating it warm with butter and honey. She never expected it to make it past the first hour.

I just doubled it today and will freeze one. I always make multiple loaves and freeze but this one I haven't tried but, haven't had an issue with freezing any different recipes

I only have one loaf pan right now, so I think I'll get another one (the one I have is technically too big for this recipe anyway, at 9x5 instead of 8.5x4.5), then work up a system of one dough-making day a week, and do a double recipe, then while that dough is doing its first rise, I'll prepare another double recipe of dough, then all four doughs can rise together (two in a loaf pan to be baked immediately, and two to be shaped and frozen). We go through about three 20-ounce loaves a week, so this should be good for us. And I could always cut the slices a little thinner than the store-bought bread, maybe.
