vegetarian meal ideas?
my husband is a vegetarian. i eat meat only when it is already made for me at a friend/families house or restaurant. we are raising our son primarily vegetarian (he is 9 months). dh has a different work schedule every day. anyone have any healthy meals that take an hour or less to cook on the stove? or even crock pot recipes? in a year of leaning how to cook on my own im pretty good with beans as a protein source.
so far i have been able to scramble and sautee tofu but havent been able to make anything much more then that with it. im finding im making the same things over and over because we have such limited options. any ideas?

This one has meat in it, but I'm sure you could skip it and maybe add more beans or veggies. Easy Red Beans & Rice
This one is a pasta with white sauce, and it has pureed beans in the sauce. I like it! Pasta with White Bean Sauce And this one is easy to do vegetarian, too- Mexican Pizza. I hope that helps!

We eat mainly vegetarian too, sometimes vegan. A few months ago I started using The Fresh 20 meal plans (vegetarian). I love it! Being short on time is much easier to handle with the plans. They tell you exactly what you can prepare ahead of time, give you specific grocery lists, and are pretty easy recipes. The cost is actually pretty cheap to me since I get extra time on my own now.
Before the meal plans (and even now when I like to change things up) I do lots of other dishes like: Nachos with guacamole, beans, soy chorizo, corn, veggies, etc Soy chorizo and eggs with tortillas Breakfast for dinner, like pancakes or waffles with fruit African peanut stew Lentil soup Black bean sweet potato burritos Veggie pizza Thai veggie and peanut noodles The list goes on! |

My favorite veggie meal: saute some diced onions or shallots in some olive oil. Add a can (or 2) of black beans and a can of diced tomatoes and simmer for a while (you want to boil off some of the water). Use this as filling for soft-shell flour tacos or soft-shell corn tacos. Top with tomatoes, orange peppers, avocado, lettuce, etc (my favorite topping is tomatillo/pineapple salsa like they had a Maui Jims).

Just made something yum the other day
bag of frozen cheese tortellini bag of baby spinach 1 medium tomato 1 Tb lemon juice 4 Tb butter Brown the butter in large skillet. Add spinach and tomato and cook until spinach is wilted. Add remaining ingredients plus a lil salt and pepper, toss. Eat. Yum.

I have been vegetarian for years and I feel I eat regular stuff? People call me the "worst" vegetarian because I don't eat a ton of veggies and hardly ever have tofu (except in like miso soup, which I rarely make, lol). My diet is pasta and mexican heavy but here is what I eat:
spaghetti/baked ziti/tortellini mac and cheese (homemade or blue box, my daughter will only eat off brand boxed stuff) burritos/tacos I used to eat a lot of nachos but honestly they are expensive salads - usually just romaine, tomato, cucumber and ranch cheddar broccoli soup potato soup All pretty simple and all stuff meat eaters regularly eat, just no meat
