nut butter substitutions

I just got the Forks Over Knives cookbook. There are lots of baked goods and a few of the sauces that use different kinds of nut butters. I am thinking its a sub for dairy butter? I found somewhere online where is says that you sub the equal amounts nut butter for dairy butter, but that is the only reference I have found to the substitution. I'd like to try some of these recipes that use nut butter but we don't do nuts because of allergies. I want to put the original item back in (well soy butter cause we can't do dairy butter). Other then butter is there anything else these nut butters might be substituting? Forks over knives does not use oils either so Its possible in at least the baking recipe that is what is being subbed. Most use cashew butter, a few use almond butter (which we can use if we can find some Blue Diamond Almond Butter locally).

Maybe the recipes use nut butter to increase protein and add a nutty flavor to vegetarian dishes? I guess I would need a specific recipe to try and guess why. Or maybe the authors want people to eat real food (what exactly is soy butter anyway?). Can you make an alternative with sunflower, pumpkin, or sesame seeds?

soy butter- meaning fake butter made from soy like Earth's Balance, Willows Run. Forks over knives are Vegan recipes.

Most of the dishes I am talking about are baked goods- desserts (cookies mainly) so the nut butters are subbing for non-vegan ??? As far as I can tell its the fat. Since its a dessert I doubt the point is to add protein. Just not sure if its butter, oil or eggs or if its all of the above that the sub is being made for.

The only recipe I can find online is one using peanut butter, which I can use wowbutter (soy based fake peanut butter) or sunbutter (sunflower seed based peanut butter) in place. I doubt they would work in place of cashew or almond. Sesame seed I doubt would work because its flavor is different. And any pumpkin seeds would have to be guaranteed peanut free. They aren't available locally. They are online but that are way too expensive to use for this.

Here is an example using almond butter http://amyseatingtolive.wordpress.co...tmeal-cookies/ . The cashew butter ones are similar. Think its suppose to be in place of the fat.
