I usually just bake salmon, covered w/ aluminum foil, at 350 with lemon slices, lemon juice squeezed on it, and pepper. I've made fish into fish cakes before too. Sometimes we'll try other types like tilapia or cod. But usually we just get salmon and eat it once a week or every 2 weeks or so. We were using having the salmon with cauliflower and quinoa as sides, but lately I prefer fish in salad. My husband likes his salmon grilled on the stovetop with lots of butter and salt & pepper. I would like to try it with coconut as well.

We've also been getting a lot of canned sardines lately and I just got canned anchovies to try. I also got a couple of cans of wild salmon to try and to have on hand.

I liek to cook fish in the microwave from frozen. I do talapia and salmon. Here's my recipes.

Place talapia in glass dish. Cover with italian dressing and parm cheese. Cook 10 minutes on high.

Place salmon in glass dish. Splash with lemon juice. Salt and pepper. Cook 10 minutes.

Another thing that my kids like is pasta with scallops and spinach. I just cook scallops in butter on stove. Make pasta. Add scallops and spinach to pasta with a bit of olive oil and bacon bits. Heat through.

I found a Baked Salmon with Buttered Vegetables recipe on pinterest that is TO.DIE.FOR. Basically you partially pan fry the salmon, frozen veggies and bread crumbs before assembling and baking for 5 minutes. With the veggies it makes a complete meal in one dish. This could easily be our favorite meal ever. And I love that it's so easy but tastes gourmet!
