Favorite bean recipes

Can everyone please share their favorite recipes with beans as the main ingredient? I'd love to replace a night per week with a bean meal to cut costs on dinners, plus beans are healthy. We already do chili, ham stock with black eyed peas, taco soup, but would love some fresh new ideas.

I make a black bean soup that we absolutely love! Here is the recipe:

2 cans black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 28oz can pettite diced tomatoes
1 can corn (I drain it about halfway)
2-3 tbsp chili powder
2-3 minced garlic cloves (we love garlic)

Combine all ingredients in a large pot and simmer for about 30 mins or until warmed through. Or put in a crock pot for a few hours. (everything is already cooked, it just needs to warm)

I serve mine topped with shredded cheddar cheese and tortilla chips.

My kiddos love it!!

This is basically our taco soup only it has slightly different seasoning, we use taco seasoning and ranch mix. And we all love it too!!! cheese and tortilla chips too. great recipe

Here's a Meatless Meatball Recipe I came across.

Ingredients (Serves 4)

2 c lentils, cooked
2 eggs
1/3 c breadcrumbs
1/2 c part-skim ricotta cheese
2 Tbsp pesto
1/2 c brown rice, cooked
1 tsp oregano
1 tsp paprika
black pepper, to taste
2 cloves garlic, minced
1/3 c onion, chopped
Instructions

1. In a food processor, combine the lentils and rice and pulse several times.

2. Transfer mixture to a large bowl and add remaining ingredients.

3. Stir thoroughly to combine all ingredients, then form into balls using your hands.

4. Place balls on a baking sheet and bake at 375 degrees for 15 minutes, flip/rotate balls and bake another 10 minutes.

I should have mentioned we try to do gluten free dinners cause my one daughter is off gluten and I hate having to make multiple meals. We have not found a "soft" corn tortilla that we like. They are all gross So we stick with the hard shells.

How could I do a burrito ingredients into a hard shell? Just layer them and put cheese on top and bake? I've never made my own burritos.
