fruit salad idea help!

My moms 60th bday party is this weekend. I am all squared away except for the fruit! I need some suggestions for a fruit salad! I am making fresh fruit cut up amd tossed together but am looking for some other suggestions that take a little more creativity! Give me some ideas ladies!

Add ginger and mint. Skip bananas and apples - both get brown and the banana makes everything slimy.

Maybe instead of tossing it all together you could make fruit kebabs with a sauce... Yogurt based or a vanilla and mint infused simple syrup might be nice. Or maybe drizzled with chocolate or fondue? You could also make a fruit tart. I use a Snickerdoodle dough for a crust, but any sugar cookie dough you like will work- baked on a pizza pan until done. Cool completely and frost with a combination of 1 jar of marshmallow fluff and an 8oz brick of cream cheese mixed together. Fan sliced fruit out decoratively on top. For extra wow you can glaze the fruit with melted apricot jam (makes it look shiney) or dust lightly with powdered sugar. after everything is in place. You can also use the same cookie dough & bake on the back of a muffin tin to make cups. Then you can put a little of the cream cheese stuff and fill with fruit. Drizzle with chocolate (regular or white) and/or glaze with melted jam. Oh. And look in the canning section and buy a jar of fruit fresh. It works way better than lemon juice for keeping apple & pear slices white.

Fruit salsa with cinnamon chips. Very, very good. But if you make it, make lots of chips they go really quick. First time I made it didn't account for people eating the chips by themselves.
Fruit salsa- pieces cut into whatever size you like
1-2 jalopeno seeded and minced
cantaloupe
honey due
watermelon
strawberries
kiwi
1 tablespoon lemon or lime. Lime tastes a little better but both will work

you can also add
blueberries
pineapple
apple
banana (i don't like banana in this one)

Toss and refrigerate until ready to serve. Serve with chips. http://www.food.com/recipe/cinnamon-...la-chips-93316
you'll want to do more then this but you get the idea. You want 1/2 cup of sugar per tbsp of cinnamon. How much you mix depends on how many you want to make. And then you need enough butter to brush one side of all your tortillas.

Get a starfruit and slice it into "stars." Then make fruit kebabs and top each with a "star" super cute and easy. I have topped them with Peeps too, for Easter.

Fruit kebobs are always a hit. Sometimes I dunk the very top piece in chocolate or vanilla candy coating for a little extra flair.

Marinated fruit is fun too. Combine a bottle of sweet wine (Riesling, white zin, etc), 1-3 cups sugar (to your taste), a couple of cinnamon sticks, some star anise, and cloves. Simmer about 30 minutes to get sugar melted and flavors combining. Cool marinade and add to fruit. Marinade at least four hours. *Because this isn't cooked very long, a fair amount of alcohol remains. To minimize alcohol, I have done this with half wine and half fruit juice.

Any acidic juice (lemon, lime, etc) or honey keeps apples, pears etc from turning brown.

I am a huge fan of kabobs but I am not going tto attempt making them for 100+ people. The cost of nice fresh fruit I Wisconsin in winter is too prohibiting. I do LOVE kabobs though and it is an awesome suggestion!

I like to do either a dressing with fresh citrus juice and honey, or a fruit dip on the side.

I also find that pineapple is a great way to stretch a fruit salad in the winter. A fresh one isn't that expensive, seems line a really big deal, and goes a LONG way.
