Engine 2

Anyone do the Engine 2 diet?

I want to do the 28 day challenge but don't want to buy the book

Ive found a few recipes but am not sure what to swap out for oil when cooking?

My mom has switched her entire diet to the Engine 2. They have some really great recipes on their blog site (The Daily Beet), also they approve of the recipes from the Happy Herbivore site as well.
As for subbing oil, depends on what you want to sub it in, kwim? I use broth when stir frying, and applesauce for baked goods.
I'm sorta cooking that way (based on the blog site, not the book) and I do use a oil spritzer on a few things like oven baked potato wedges and things like that. You don't need much.

thank you I will check both of those out! I was specifically thinking of crust for pot pie?

I looked in my mom's book, and they don't have a recipe, but the happy herbivore this pot pie recipe http://happyherbivore.com/2009/04/ve...scuit-pot-pie/ I've made it but made full fat biscuits. I wonder if you couldn't sup a regular butter with a nut butter, like cashew, or almond (peanut would be too strong a taste I think)?

I might not worry about the oil except in baking and stir fry, easier subs. I googled and couldn't really find anything either for cooking with oil, except maybe omitting it. Guess I will just experiment!

I was going to ask how does your mom like the diet?

She loves the diet! She has so much more energy than she did, and she went from having high blood pressure and cholesterol to having those drop to normal. She got started with it by doing the Forks over Knives way of eating and just evolved into doing the Engine 2 Diet.

I learned about the 21 day Vegan Kickstart from the Forks Over Knives page, they send you emails and they have tons of recipes and tips.

We pretty much eat this way. I have all the Happy Herbivore cookbooks and I water sauté in most all of my recipes to omit oil. I find I have less tummy troubles when I omit fats from my diet. I am skinny so it is not about losing weight, it is more about feeling good.
