I've got some leftover rotisserie chicken, so I think I'm going to chop it up and add it to a salad. I'm thinking chicken/lettuce/tomatoes/corn/cheese/tortilla chips with a ranch/salsa dressing.

Tonight was a "what can I thaw and cook quick night". So it was grilled tenderloin steaks (we buy half a beef at a time and butcher our own lambs so always lots of meat to grill on hand), Lundberg Tuscan Rissotto (out of a box) and frozen (cooked) peas.

And tonight was pork fried rice using leftover rice and pork from last night. YUM!
I had a bag of frozen peas and carrots and green onions to kinda round it out. Dinner was done in about 20 minutes because I had to cut the pork chops up and mince the garlic. Super super easy and the stove was only on for about 15 minutes!

Grilled chicken! And I love to pair it with a cold cheese tortellini pasta salad with pesto dressing (pesto, mayo and vinegar). I toss in red peppers, black olives and sweet corn. It's the bee's knees with fresh fruit on the side.

We had baked pork chops, brown jasmine rice, and steamed broccoli. Made enough rice to have fried rice for dinner tomorrow night.

Tonight I pulled out a complte frozen meatloaf dinner I froze last month. I thawed and heated it in the oven and served dinner.

I am so proud of myself. It is time for grocery shopping. That usually means frozen Totinos pizza. Not this time though.
