Egg recipes?

I get 30 eggs for $3 at my farmers market every week. So what would you make I need a to of egg ideas!

French Toast is a fav here. Or Any kind of Quiche takes up a lot of eggs.

We make egg salad, deviled eggs, we add them to salads, tuna, boiled for quick snacks, egg sandwiches on bagels.

I am not big on eggs but we do love deviled eggs. That would be tops. Egg Salad sandwiches. I make egg people for dd sometimes- half a boiled egg, place it yolk side down. Use olive slices for the eyes, red pepper strip for mouth, carrot strips for crazy hair. I like egg white omelettes. Can't stand omelettes with yolks. Then you can use all the yolks to make custard or pudding or pound cake. If you like whole egg omelettes then that is obviously an option.

Scrambled egg burritos that you can freeze! Or a batch of baked egg patties! (both recipes are in lots of places online, including on my blog, below)

My boys practically live on scrambled egg burritos so that is my vote too. I take a Saturday (or any day you have time) and make giant batches to freeze. They don't last long enough though. I stuff them with whatever. Dh likes a bit of salsa, cheese and Canadian Bacon in his. The boys can't have cheese so just Canadian Bacon or pepperoni and eggs for them.

I also like to make to fritattas, like quiche but no crust. You can really put anything in them and they can be frozen either whole or in portions for later.

I loved Scottish Baked Eggs (not the fried Scotch Eggs), it's soft breadcrumbs with eggs broken over, more breadcrumbs, cheese and then you pour cream or half and half over and bake it until the eggs are set. I found the recipe in a little British cookbook my grandmother gave me,my kids really like it too.

ETA: Found the recipe online! I usually make 6 eggs at a time so I don't really measure anything. http://food52.com/recipes/505-scottish-farmhouse-eggs
