healthy lunch ideas

I get so stuck on what to make for lunch. our suppers are good and healthy, typically. but once the grocery shopping is done, lunch is somehow usually left to kraft mac-n-cheese, chicken nuggets or hot dogs. what do you do for lunch with young kiddos that's decently healthy?

Tharen is picky and likes tiny meals or snacks throughout the day. He is also casein intolerant so no dairy for him for lunch. He eats things like

Carrots and peanut butter
Banana and peanut butter
Banana and peanut butter smoothie (I put flax and coconut milk in these)
Left overs from the night before
Apple sandwiches (peanut butter and seeds on apple rounds)
noodles with marinara
scrambled eggs and fruit

Kearnan is not picky at all and needs a bigger meal. He eats
left overs
celery with peanut butter plus a banana or other fruit
frozen veggies (I keep a big bag in the freezer and he microwaves them)
Banana and peanut butter smoothie with veggies
Hard boiled eggs, veggies and fruit
noodles and marinara with fruit
salad (lettuce or spinach with olive oil, nori, and nutritional yeast) plus fruit

We do a lot of eggs here... one of the few things of which DD eats more than a bite or two.

Could you do leftovers from dinner? That's usually what we do.

DD also likes:

English muffin pizzas
Wraps (she will eat anything in a tortilla)
Pasta salad and add veggies, chopped chicken, etc.

I usually save the leftovers for DH to take to work, sometimes he has to work late and bring 2 meals. my kids looooove pasta, too. i could make plain noodles and they'd gobble it up. sometimes they like hard boiled eggs, sometimes not.

my kids are all picky on specific things, so finding things that they will all eat is tough.

we do pepperoni wraps (a tortilla with pizza sauce, pepperoni, and cheese, folded and baked)
deli sandwiches
veggies and rice
a whole plate of fruit and/or veggies

Not sure on healthy but some ideas are buttered noodles, leftovers, make own chicken nuggets, make own mac & cheese, mini pizzas, salads eggs with things, pb & j sandwiches......

We do lots of sandwiches, soups, leftovers. Tuna melts are yum! Or grilled cheese with tomato soup as the weather gets cooler. We also do your basic un-healthy options (toasted ravs, chicken strips, mac n cheese, etc.)
