I have a one-pot alfredo(y) pasta that we love. I have also been making a creamy tomato pasta with pesto grilled chicken. Sort of a take on Pioneer Woman's Pasta ala Betsy which has shrimp and is also delicious. Maybe one of those will speak to youLet me know if you would like any links or recipes.

Pasta primavera. We just had this last night. Here is my recipe.

1 1/2cups broccoli florets sliced thin
2 medium carrots sliced thin
1/2 cup sliced green onions
1/2 butter stick (real butter)
small pack of sliced white mushrooms
1-2 cloves of garlic minced
1 tsp basil
1/2 tsp salt
1/4 tsp pepper
1/2 cup dry white wine or chicken broth
8 oz cooked linguine (half a pack)

Cook linguine according to package. While it is boiling, saute the broccoli, carrot and onions in the butter for 3-4 minutes. Add the mushrooms, garlic, salt, pepper, basil and saute for another minute or so. Add the broth or wine and cover and simmer for 1-2 minutes. Drain the linguine and toss in the sauce and veggies. Top with a bit of grated parmeson.

I love pastina. I skin a tomato in the water then cook up the pastina. I cut up the tomato, and add some butter and shredded cheese plus s&p and it's soooo good. I don't serve it to my husband because he thinks it's ridiculous, but my kids love it. Maybe both of yours will too.

If you want something more involved, I can dig out a recipe for Chicken Riggies. Have you made that? I think the key is the Worcestshire sauce, among other things.

Oh and don't forget some lo mein noodles with peanut sauce.
