Tasty, easy cauliflower recipe?

I've got quite a bit I need to use up. Not ordinarily a cauliflower eater, so I'm not sure what to do with it, but it's good locally grown stuff and don't want to waste it. Thanks for any ideas!

roasted, mashed like potatoes, or mashed and added to a cheese sauce to thicken it for homemade mac and cheese.

Hopefully this doesn't sound weird.....but we love cauliflower like this.
Cut it into little chunks
Boil it for 3-5 min
Rinse
Beat 4-5 eggs add salt and pepper to taste and add the boiled cauliflower mix the eggs and cauliflower
Fry it with two tablespoons of oil

Our favorite is roasted with minced garlic, salt and pepper. Very simple. Just drizzle with oil and roast until parts are turning brown. Its one of the few ways the kids will eat it. Dh likes cauli soup but you need half and half for it). its just roasted like above but add onions and some extra garlic. Then gets purred with some chicken or veggie broth until slightly thicker then you want it. Put it in a pot and add half and half until you get to your thickness. Heat through. Can add red pepper flakes too.

I dry roast it and then either put coconut oil and cinnamon over it (ok that sounds weird but it is really good, works for Brussels sprouts too) or dip it in BBQ or other favorite dipping sauce.

I also make "mac and cheese" with it. We are vegan and gluten free so our "mac and cheese" is not made with milk, butter, flour or real cheese. Cauliflower makes it thick and healthier too. The boys absolutely love it and request it all of the time.

I cook the head of cauliflower whole, drain and put in baking dish. Cover with slices of cheddar cheese and bake at 350 until cheese is melted and brown. Yummy

Thanks, mamas! I'd actually already pureed half of it with some zucchini for adding to mac'n'cheese. But this head of cauliflower was HUGE, which is why I still had leftovers...decided to toss with oil and garlic and roast.

mmmmmmm cauliflower!

there's also a recipe for gluten free pizza that uses boiled mashed cauliflower in place of the crust. haven't tried it yet but it looks good. I love cauliflower. I usually just eat it raw in salads or steamed/boiled with cheese or butter sauce.
