Our fav is lemon cauliflower.

Cut the cauliflower into florets. Put in large sauté pan that has a tiny bit of olive oil in it. Add 2 garlic cloves and the juice of 2 Lemons. I usually add the entire halves of the lemons as well after squeezing them for flavor. I sauté until the cauliflower starts to get soft and the garlic starts to give off a nice aroma. I them dump it all on a roasting pan and sprinkle with grated Parmesan. I roast it in the oven until the cauliflower starts to brown.
I fish out the lemon halves and garlic cloves before serving.


Soooo good even my 22 month old will eat it!

As others have said, roasted! I like to toss the raw cauliflower with olive oil, course mustard, and salt, then roast until brown.

Cauliflower rice!!! Saute minced garlic and scallions. Blend raw cauliflower until it looks like rice... mix with sauteed garlic and scallions. It's a super simple way for me to get my fiber in.

I saute cauliflower in skillet until tender. I make a mixture of homemade breadcrumbs with olive oil, a bit of garlic and lemon if available. Then I toss that into the skillet and cook a few minutes more.

When I have extra cauliflower, I make gobi alu, an Indian dish with potato and tomato. Yum.
