Here is my favourite basic recipe.
And here is my favourite stir fry recipe, it calls for shiitake mushrooms but I have used crimini and a mix of crimini, shiitake and oyster mushrooms.

This came in my CSA's newsletter.

Bok Choy Stir-Fry

1 tablespoon olive oil
2 -3 cloves garlic, minced
1/4 teaspoon ground ginger
1/4 teaspoon ground black pepper
4 cups bok choy, thinly sliced
1 chicken bouillon cube, dissolved in 1/2 c. water
1/4 cup soy sauce
1 teaspoon granulated sugar
1 tablespoon cornstarch

Directions:
Heat oil in saucepan over medium heat. Add garlic, ginger, black pepper, and Bok Choy.
Stir fry about 3 min.
In bowl, combine dissolved bouillon and water, soy sauce, sugar, and cornstarch. Whisk well.
Add cornstarch mixture to skillet and stir fry until sauce thickens and cabbage is tender, about 3 min.
Serve hot. Servings: 4-6

We make it as an extremely easy veggie side, not as part of any bigger dish.

Steamed baby bok choy:
Cut off cluster end (like with celery). Wash. Throw in pan with a little water, and a little butter. Steam briefly. Serve in it's little bit of remaining fluid, although generally then the fluid stays in the serving bowl. Very tasty. And for some reason the butter does matter, otherwise I'd just skip it. Very cost effective if bought from the Asian grocery store.

We like it as part of stir fry. And in soups.

My husband just sautees it in a wok with some soy sauce (tamari), oyster sauce, garlic and a bit of salt and pepper. Bok Choy is my favourite vegetable. So so good. DH is Chinese so we eat it a lot.

Don't have the recipe but I tried chicken and bok choy at a chinese restaurant once and have been hooked ever since..
