New pots and pans! What should I get?

I'm getting new pots and pans for Christmas. I need to pick a set out but I don't know where to start. All I know is that I don't want Teflon. I'm very curious about ceramic, but I don't know anything about it. I have a generous budget. Suggestions?

Don't get a set, get a variety of different types.

I really like my Le Crueset, and I just got a couple of Falk copper pots that I love. Crate and Barrel is having a sale on Mauviel copper, and I might get a couple more.

Also, you can get non-stick non-teflon. Hard Anodized is non-stick, but completely safe. One of mine I have had for 7 years (I think, maybe 6?), and it's in great condition. I bought Analon with the copper core. You can even use metal utensils on them. I'm not a fan of not non-stick for pasta. My pasta always sticks. So I have a few skillets and a stock pot in anodized non-stick.

I like All-Clad. I wouldn't get a set though, I'd buy open stock of the pieces you would use the most. All-Clad can tear through even a generous budget, so I would get the most important pieces now and add as you go.

We have a complete set of All Clad pots and pans, worth every penny because they really are the best. They have stood the test of time and are amazingly easy to clean (which I wondered when I initially bought them).

For big pots of chili and soups I use my Le Crueset dutch ovens, they are great but you need to use silicone spoons so you don't scratch them.

Bed, Bath & Beyond has coupons all the time and they sell All-Clad so that is how I was able to buy so many pots & pans.

Porcelain enameled cast iron. I have 5 pieces I have picked up at garage sales and auctions. They saw use before me and have seen heavy use since I bought them. I turned down a brand new set of regular pots and pans for my used pots. I have never regretted it and would do so again in a heartbeat.
