Visited a Grist Mill

We bought some yellow grits and I wanted to find out if anyone had a way to cook them in the crock pot overnight. I cooked some on the stove but had to cook them way longer than directed because they weren't soft. Anyone have tips?

I'm not really sure that you could do grits in the crock pot because they would clump if not stirred really well when they were cooking.
