Sauerkraut from scratch

I had so much fun making a sourdough starter a few months ago that I thought I'd give sauerkraut a try. Someone had mentioned it on Facebook and said that when it's ripe, it tastes kinda like pickles, and I like pickles.

My bowl was slightly too small for good mixing of the cabbage bits with the salt, so I kept spilling some trimmings, which I of course then had to eat. They tasted good, so then I got even more careless with my mixing so more would spill, lol. If I like it so well "fresh," I hope I like it just as much when it's "ripe."

Yes! Its so cool to watch the process! And you definitely need a huge bowl! I made some using the fresh cabbage/salt method a month or so back and its amazing! If you garden or get multiple heads of cabbage to prepare at once you can purchase one of the white food grade buckets from lowes or home depot. You can also mix red cabbage and you get an almost neon pink result. Would be great for holidays or as a festive side dish :-) also if you have sensitive skin use food safe gloves...my hands were raw for days after lol
