Healthy Eating
OMG, how did I miss this forum before???
What are your favorite healthy/low-fat recipes? I need more ideas now that we're eating better and cooking from scratch. I've tried the low-fat Vegetable Lasagna recipe from Win the Fat War cookbook, which wasn't bad. And I discovered that the turkey chili I had been eating all along was pretty good for me. But I need more variety. DH is one of the pickiest eaters I know, so anything that's exotic probably wouldn't work... but give me what you got!

Carrie-We eat a ton of healthy stuff around here and my best friends won't eat with us as they are terrible eaters LOL
Even replacing white and brown rice with Quinoa is a great place to start without altering your normal recipies. Quinoa is touted to be one of the worlds super foods (high in protein and fiber!) and you cook it the same way as rice. (i.e. 1 cup quinoa to 2 cups water and cook like rice) |

I'm a little late in replying, but thanks for that tip! I don't eat much rice but when I do, it's usually white because I don't really like the taste of brown. I'll have to try quinoa and see if I like it better.
