Tonight SO is working late again so I'm just having my meatloaf by myself. It's good too. It's my bff's recipe and it's awesome! My SO doesn't even like meatloaf but he raves about mine (well, Amy's! lol). If anyone wants the recipe LMK, it's wicked easy.

Tuna noodle casserole. I haven't had tuna in forever and had bought a couple of cans when hubby was determined he was going to eat two a day at work- he hates it straight from the can! So, here comes a mish mash of 3 recipes. I have my list made up for a few days... Tomorrow is Speghetti and salad, Wednesday, homemade chicken pot pie, Thursday is RCIA Christmas party (they feed us), friday chicken stuffing casserole, Saturday fried rice, Sunday ranchy beef n noodles, Monday ham and scalloped potatoes, Wednesday taco ring... I am a freak with planning!

chicken thighs baked with tiny tomatoes and mushrooms, served over rice. Cheep and easy for a sick mama.

I made chicken bryan ( grilled chicken topped with goat cheese and a sundried tomato sauce) with fettuccini alfredo and spinach salad last night. Tonight, I'm thinking about hot dogs and french fries although that may change within the next hour, since stir-fry also seems appealing right now.

I made the cheesy brocoli chicken I found on here.
Chicken breast in the crock pot with broccoli and 1 can cream of broccoli soup and 1 can cheddar soup. Served over rice. My children LOVED it and I thought it was pretty good too!
