IDK, maybe noone else makes their own pizza, but we put it in our pizza. Maybe someone said that and I missed it!

Taco Salad is a fave around here!! But one of my all time faves is Nacho Casserole which you can make w/ leftover taco meat as well.

Ground beef/turkey (or taco meat!)
1/2C diced onion
1 can cream of mushroom
1 can cream of chicken
1 can(small) of diced chilies
1 can (or frozen) corn (I use MexiCorn Niblets)
Tortilla chips (even the smashed stuff in the last of the bag works!)
Shredded cheese, colby jack, jack, cheddar... whatever!
Sour cream & green onions to top

Saute onions, brown meat & mix all but the chips & toppings together. Spread crumbled chips on bottom of casserole dish, top w/ meat/soup mixture, sprinkle w/ cheese & bake until cheese is melted (about 20-25mins on 350) and then top w/ sour cream, green onions & taco sauce! Viola!

Yup- we make burritos, quesadillas, nachos, put it in rotel dip with velveeta (super yum), there are TONS of taco casseroles too. We also make taco rollups where you put taco meat and cheese inside of a crescent roll and fold it over- they are GREAT with dipping in sour cream, salsa, etc...it's sortof a pampered chef recipe!

I thought I saw a Mexican tater tot casserole recipe someone posted. Wonder if I can find it.

Here it is!I was wanting to try it!

Mexican Tater Tot Casserole

1 lb lean ground beef or turkey (use veggie crumbles here)
1 package taco seasoning
1 can (11 oz) corn with peppers, drained
1 can (11 oz) condensed nacho cheese soup (here I used shredded cheese instead.
1 can Rotel Mexican style tomatoes (use mild if you don't want it spicy)
4 cups Tater tots
Salsa and sour cream, to serve

Heat oven to 375. Cook beef with taco seasoning mix according to package instructions. Spoon mixture into ungreased 11 x 7 pan or 2 qt casserole. In separate dish combine corn, tomatoes and spoon over meat mixture. Spread soup (or cheese) over corn. Arrange tots in a single layer over this. Bake 45 minutes or until tots are lightly browned and mixture is bubbly. Serve with sour cream and salsa, if desired.

Make burritos and freeze them for DH's lunch. Then he can have a frozen burrito just like you'd get at a gas station.

I just did this myself. I froze the leftovers oh about two weeks ago. Last night I had no cooking ambition so I pulled it out and warmed it up. I melted some cheese and we had loaded nachos. Add a little lettuce, tomatoes, onions, black olives, salsa and sour cream. It was great and little effort!
