what can i do with leftover taco meat?

Depending on how spicy it is, I turn my taco leftovers into sloppy joes, or if I have extra sloppy joe meat, I turn that into tacos!

I think it's funny that I'm an avid DS reader/participater and I just googled "things to do with taco meat" and this thread was the first thing that popped up with google...hehe. Go DS! Guess I should have looked here in the first place.

I make "Mexican pizza" (premade pizza crust, enchilada sauce, refried beans, taco meat, pico de gallo, cheese and bake.)

Taco Stew

1/2 pound taco meat
1 medium onion, chopped
2 garlic cloves, finely chopped
2 cups chicken broth
1 large zucchini, cut into small cubes
1 (15-ounce) can black beans
1 (14.5-ounce) can diced tomatoes
1 cup frozen corn kernels
1 cup medium salsa

Sauté onion and garlic until onion is translucent. Add remaining ingredients and simmer, covered, stirring occasionally, 15 to 20 minutes.

I do breakfast pizza with it...kind of like a breakfast burrito on a pizza. I do the whole crust thing...add the meat, scrambled eggs, tomato, cheese, and whatever hubs would like to have. The breakfast pizzas freeze well too! I've made them in muffin size and then thrown them in 3 at a time in ziplocs and frozen them. They look cute too b/c the crust puffs up around the meat/egg/cheese/veggie blend.
