what can i do with leftover taco meat?

I make breakfast tacos... stir in some eggs and scramble, then top with whatever you want to put on it with some steamed corn tortillas. Good stuff.

I add a can of corn, tomatoes and black beans and layer it between tortillas with cheese and bake in the oven 350 about 20 to 30 mins

I'd either freeze for an easy meal later or make taco topped baked potatoes
