Needing dried beans & lentils recipe's

We are wanting to eat less meat for health and financial reasons so we are looking towards keeping dried beans & lentils in our store room.

Ideas and recipes's please!

I guess its not really a recipe because I kind of throw it all in, but a few ideas.

Meatless Chili - I use any kind of beans, puree some fresh tomatoes, slice some tomatoes, dice up different colored peppers and onions,add a little salt, pepper, and chili powder and let it simmer all day in the crockpot. My dad likes to use navy beans and use Tomatillos (green tomatoes?) instead of red for a green chili.

Refried beans. - boil pinto beans w/ onions and garlic until they're soft (2-3 hours?). Then blend w/ water in the blender and "re-fry" them with a little canola oil. Layer w/ Cheese on tortillas and you have bean burritos.

Lentils are awesome - they have great flavor no matter what - so use a little veggie broth (or chicken), boil beans until they're soft w/ any veggies at all. Add a little salt if you need it and its delicious.

I'll be watching for more ideas too.

I posted these on another thread, but here they are again. Enjoy!

Lentil salad

- 1 Lb lentils – cooked, drained – set aside
- 6 scallions, chopped (I’ve also used a small red onion with good results too)
- garlic minced
- Jar of roasted red peppers, chopped
- ½ cup extra virgin olive oil
- 3-4 tbs red wine vinegar
- ½ cup fresh dill
- ½ lb crumbled feta
- salt and pepper to taste

Mix and let marinate for 30 minutes.

Lentil Shepherd’s Pie

- 1 bag lentils, cooked/drained
- 5-6 medium-large potatoes – cooked and prepare as mashed potatoes
- 2 celery stalks, minced
- 1 small can tomato sauce
- 1 large yellow onion, chopped
- olive oil for sautéing
- favorite herbs – Ie, Basil. Oregano, parsley

Preheat oven to 350

Sautee onion, celery, and garlic in olive oil. Add cooked lentils, tomato sauce, herbs, salt and pepper. Pour into baking pan (I use a 9 x 13) and cover with the mashed potatoes. Bake about 25 minutes

Ok, I have a slow cooker, can I slowly cook just the beans in the water and drain them and THEN add the other ingredients?

I am new to dried beans. I have a bag of dried beans and dried lentils so I need someone to hold my hand LOL

I started a thread like this a while back and got some great responses. Check down the Kitchen threads. I have been told you can cook beans in the slow cooker, I haven't done it yet because I have a huge slow cooker and right now it is just me and the girls so I don't have to cook a ton, wish I had a smaller crock to try the beans in, I think I would cook them more often if I did. Good luck

Oh here is one recipe that I absolutly love, grew up eating these.

White beans and ham
Use a white bean like Navy beans
Do the presoak, either over night or the quick method.
put beans, onion, and ham (either cubed up pieces or my mom would put a ham bone in) and cook beans until tender as directed. Salt and pepper to taste. MY mom would wait to put the onion in and just top the beans with chopped onion but I like the onions cooked in, so either way is good. Serve w/ cornbread.

This is one we DO know and love I will go search for the other thread, I do now recall another bean thread Thanks
