dairy free cake

My DS has been off dairy for a while now because of his ezcema..... any dairy free cake recipes that youve tried and they came out great? I need something that will do well as a sheet cake and can be iced.

I was hoping for chocolate

Basic QuikCake -
1.5 cups flour - recipe calls for whole wheat, I used white
3 tbsp's baking cocoa
1 tsp baking soda
1 cup sugar
1/2 tsp salt
5 tbsp's vegetable oil
1 tbsp vinegar
1 tbsp vanilla
1 cup cold water

Sift together the first five ingredients, pour the next three ingredients into a hollow of the dry ingredients. Pour cold water over all ingredients and mix with spoon until nearly smooth and flour is not visible in mixture.
Bake in a 9x9 square baking pant at 350 degrees for 30 mins.


I used white flour in place of the whole wheat flour (wheat allergy here) and used safflower oil in place of the vegetable oil (soy allergy here too). It was very yummy, the other kids at the party even ate some!

ETA - here's a pic of the finished cake, I used a Wilton icing stencil and sprinkled powdered sugar on the top to say Happy Birthday

If you have a recipe that you already know you like, you can sub the milk with Almond Milk. It works great!

I was just looking for the same thing to make a cake for my son's first birthday... I found a mix for cake and frosting sold in local stores that is supposed to be very good. I'll be trying it out this week.
