Smile Anyone ever cook carrots in the oven like sweet potatoes?

I decided to stick a carrot in the oven (wrapped in foil) to see what would happen because I was cooking something else anyway and it was TASTY. And DS, who normally doesn't each much, ate almost the whole carrot. It makes them really soft and they cook way faster than boiling them. (And I imagine it probably keeps more of the nutrients in than boiling does.)

Anyway, if you haven't tried it, try it! Especially if you have a picky toddler...they might actually eat it like DS did.

Sounds delicious but DD doesn't eat ANY vegetables cooked and especially orange cooked veggies lol...she's an oddball.
