Okay, I am all about EASY!

So...here's my crockpot roast:
1 roast
1 pkg onion soup mix
1 can diet cola
cut up red potatoes

Put potatoes in bottom of greased (or sprayed) crockpot, add roast on top. Sprinkle soup mix on top of roast, pour in cola. Cook low 8-10 hours. Yum.

Crockpot Beef and Broccoli:
1-2 pounds lean beef, cut in strips
1 t. ground ginger
1 T. sugar
2 T. oil (I use 1 T. sesame and 1 T. canola)
1/2 c. soy sauce
2 cloves garlic, minced
1 bunch broccoli, cut/broken into florets
2 T. flour

Spray pot with nonstick, add beef strips. Combine all except broccoli and flour, pour over meat. Cook low 6-8 hours.
About 1-2 hours before dinnertime, add broccoli, and stir.
Just before serving, ladle out some of the liquid (1/2 - 1 cup?), stir the flour in to thicken. You can serve this sauce on top of the beef and broccoli. (or you can leave this step out and just use the thin sauce from the crockpot. I serve over brown rice.

A couple of mine:

Apricot Chicken

4-6 boneless skinless chicken breasts (I put them in frozen)
1 bottle Russian salad dressing (it's red, in a small bottle)
1 c. apricot jam or preserves (I sometimes use apricot/pineapple)
1 pkg dry onion soup mix

Spray/grease the crockpot and mix the salad dressing, jam and soup mix in the bottom. Add chicken. Cook on high for 4-6 hours or until chicken is done. Serve over rice or noodles.

One pot Beef Stroganoff

2 lbs. beef stew meat (I usually use cheap roasts)
2 cans cream of celery soup
1 pkg dry onion soup mix
2 small cans sliced mushrooms (or use fresh)

Dump in greased crockpot and cook 2-3 hours on high. Serve over rice or noodles.

Mac 'n Cheese It's so good!

16 oz. dry macaroni
1 can Condensed Cheddar Cheese soup
16 oz. sharp grated cheese
1 can evaporated milk
1 c. milk

Cook macaroni according to package directions. While noodles are cooking, add soup, grated cheese, evap. milk and milk to crock-pot, on low. Stir to combine. Add drained noodles when done and stir in to crockpot. Cook on low 3 hours. Freezes well too!

Calico Baked Beans

16 oz. pkg bacon, cooked and crumbled
2/3 c. bbq sauce
1/3 c. catsup
3/4 c. brown sugar, packed
1 tsp. dry mustard
2 tsp. cider vinegar
16 oz. can pork & beans (don't drain)
16 oz. can butter beans, drained
15 oz. can kidney beans, drained

Mix all ingredients in crockpot and cook on low for 2-3 hours.

I love doing soups and stews in the crockpot too. I've got an awesome Pasta e Fagioli recipe that you can do in there, but I usually just do it on the stove rather than dirtying the crockpot after browning the meat and veggies. But I can dig it up if anyone wants it. Tastes a lot like Olive Garden's version.

My favorite chicken crock pot recipe:

4 boneless chicken breasts
1 can cream of chicken soup (or cream of broccoli if your kids will eat it)
1 can of wine - I use chardonnay or white

Let it all cook on low 6-8 hours or until the chicken breaks apart. About 20 minutes before dinner I shred the chicken up and add a cup of sour cream and serve over noodles or rice.

I used to make my chili a vegetarian, and probably vegan if I think about it....

I would use TVP instead of meat. Or you can use Tofu!! It really takes a great flavor.

I would do a can of black beans, chili, kidney and sometimes Great Northern beans. Then, season with chili seasoning, cumin, coriander, salt and pepper. I would also add Miso soup mix for thickening and flavor. Sweet red bell peppers, a jalepeno or two, garlic and tomatoes are the rest of it!

Carrot Soup

Serves 4 to 6. Recipe is by Jean Dale.

1 chopped onion
3 cloves garlic, chopped
2 tbls. butter
2 medium potatoes, peeled and chopped
6 large carrots, coarsely chopped
1/8 tsp. thyme
1 bay leaf
1/4 tsp. salt
1/4 tsp. pepper
4 cups chicken stock

1. Sauté onions and garlic in butter. Transfer to slow cooker.

2. Add all other ingredients and cook in slow cooker on Low for 6 hours.

3. Discard bay leaf.

4. Process soup in food processor and serve hot.

A girlfriend gave me this one and the family loves it...

3lb Chuck Roast
1 jar spaghetti sauce (I use Newman's Own mushroom marinera but you can use any or your own)
1 onion - chopped
1 green pepper - chopped
frozen spinach - thawed (I have used fresh when I have it)
Above was recipe given to me but I add a ton more veggies to the mix such as...
zucchini - chopped
yellow squash - chopped
mushrooms
broccoli - chopped
carrots - chopped

Cut up roast into 2x2 pieces, brown and put in crock. Saute onions, peppers, and mushrooms - put into crock. Add the rest of veggies and pour sauce on top. Mix well, low 8-10 hours. I make this whenever roasts are on sale and freeze for later.

I am going to copy the recipes from this thread into a binder for future use, great idea starting it!

Chicken Tacos

3-4 chicken breasts
a jar of picante sauce *hot, mild, whatever you like. i use mild*
a packet of chicken taco seasoning


put just enough picante sauce in the bottom of the crock pot to cover it. pour in the chicken taco seasoning, mix together. put the chicken in, and cover with the rest of the sauce.

cook on low for 8 hours (best results) or on high for 4.

serve however you like your tacos.


(i use this for chicken enchiladas too)

Here's my all time favorite:

The Best Beef Stew
1/2 cup all purpose flour
2 teaspoons salt
1 teaspoon black pepper
3 lbs beef stew meat (trimmed and cut into cubes)
1 can (16 oz) diced tomatoes in juice
3 potatoes (peeled and diced)
1/2 lb smoked sausage (sliced_
1 cup chopped leak
1 cup chopped onion
4 ribs celeryi (sliced)
1/2 cup chicken broth
3 cloves garlic (minced)
1 teaspoon dried thyme leaves


**I myself use a few more than 3 potaotes, omit the leak, and use a whole pound of smoked sausage)

Combine flour, salt, and pepper in a resealable bag. Add beef, shake to coat. Place beef in slow cooker. Add remaining ingredients. Cover and cook on LOW 8-12 hrs or HIGH 4-6 hrs. Makes 8 servings.
