Vegan Chilli
1 can red kidney beans (drained) 1 can reg kidney beans (drained) 1 can blackeyed peas (drained) 1 can dieced tomatoes (not drained) 1 can of corn 1/2 can tomatoe paste 1 onion 1 can green peppers 1/2 package of elbow mac 1 can water 2 cloves garlic 3 tsp chilli powder (i like mine spicy!!!) 3 tsp corriander 1 tsp red pepper flakes salt and pepper I saute my onion and chillis and garlic first then i just thriugh eveything in the crock pot and let it cook for 3 hours or so. It easy!!!! And its good!!!

I have 2. First one is corn beef and cabbage, but that's a no-brainer.
Short Rib Stew: 2 lb short ribs(or you could use boneless) 1 pkg baby carrots 1 or 2 potatoes 1 big can of Campbell's tomato soup 1 pkg Lipton's onion soup mix Cut ribs into cubes between bones if using bone in. Throw into crock pot. Throw bag of carrots in. Peel and cube potatoes. Add to pot. Pour soup over meat and veggies. Add onion mix. Mix all ingredients together. I put it on high for 2 hrs, than low for another 4 or so hrs. I like to pull out all the bones before serving. They slip right off or are already loosened and at the bottom of the pot. It's all about the meat!

Here's another one my family really loves, you do have to do some cooking on the stove
1 tablespoon butter 1 tablespoon olive oil 6 bone-in pork loin chops 1 can (10.75oz) cream of chicken soup 1 can (4oz) mushrooms, drained and chopped 1/4 cup Dijon mustard 1/4 cup chicken broth 2 cloves garlic, minced 1/2 teaspoon salt 1/2 teaspoon dried basil leaves 1/4 teaspoon black pepper 6 red potatoes, unpeeled cut into thin slices 1 onion, sliced chopped fresh parsley Heat butter and oil in large skillet. Brown pork chops on both sides. Set aside. Combine soup, mushrooms, mustard, checken broth, garlic, salt, basil, and pepper in slow cooker. Add potatoes and onion, stirring to coat. Place pork chops on top of potato mixture. Cover and cook on LOW 8-10hrs or HIGH 4-5hrs. Sprinkle with parsley before serving.

Peach Cobbler 2 packages (16 ounces each) frozen peaches, thawed and drained 3/4 cup plus 1 tablespoon sugar, divided 2 teaspoons ground cinnamon, divided 1/2 teaspoon ground nutmeg 3/4 cup all-purpose flour 6 tablespoons butter, cut into small pieces Combine peaches, 3/4 cup sugar, 1 1/2 teaspoons cinnamon and nutmeg in a medium bowl. Place peach mixture in slow cooker. For topping, combine flour, remaining 1 tablespoon sugar and remaining 1/2 teaspoon cinnamon. Cut in butter with pastry cutter or two knives until mixture resembles coarse crumbs. Sprinkle over peach mixture. Cover and cook on HIGH 2hrs. Pumpkin-Cranberry Custard 1 can (30 ounces) pumpkin pie filling 1 can (12 ounces) evaporated milk 1 cup dried cranberries 4 eggs, beaten 1 cup crushed or whole ginger snap cookies (optional) whipped cream (optional) Combine pumpkin, evaporated milk, cranberries, and eggs in slow cooker and mix throughly. Cover and cook on HIGH 4 to 4 1/2 hours. Serve with crushed or whole ginger snaps and whipped cream, if desired. Warm Spiced Apples and Pears 8 tablespoons unsalted butter 1 vanilla bean 1 cup packed dark brown sugar 1/2 cup water 1/2 lemon, sliced and seeds removed 1 cinnamon stick, broken in half 1/2 teaspoon ground cloves 5 pears, cored and quartered 5 small Granny Smith apples, cored and quartered Melt butter in saucepan over medium heat. Cut vanilla bean in half and scrape out seeds; add seeds and pod to pan with brown sugar, water, lemon slices, cinnamon stick and cloves. Bring to aboil; cook and stir 1 minute. Remove from heat. Place pears and apples in slow cookr; pour lemon syrup over fruit and mix well. Cover and cook on LOW 3 1/2 to 4 hours or OGH 2 hours. Stir apples and pears every 45 minutes to ensure even cooking.

Cheese and Corn Chowder:
3/4 C. Water 1/2 C. Chopped Onions 1 1/2 C. Sliced Carrots 1 1/2 C. Chopped Celery 1 tsp. Salt 1/2 Tsp. Pepper 1 Can of Corn, Drained 1 Can Cream Of Corn 3 C. Milk 1 1/2 C. Grated Cheese 1. Combine water, onions, carrots, celery, salt and pepper in cooker. 2. Cook on high 4-6 hours. 3. Add corn, milk and cheese and cook for an additional hour on high. Then set to low until you are ready to eat.

I don't have the time to read all the posts (dial up!) so I don't know if something like this has been posted or not, but this is the easiest and yummiest crock pot recipe I've ever made! I didn't make it up, I got it from another mama on another board
![]() Chicken Chili Put 3-4 frozen chicken breasts in the crock pot with a jar of salsa and chili powder or southwestern seasoning (I use chili powder). Cook 4 hours on high. Pull apart the chicken with 2 forks (it will seriously fall apart!) and add a can of mexicorn and a can of black beans. Let cook for one more hour. Serve over rice or with tortilla chips. You can put cheese, sour cream, green onions - whatever you want on top! Leftovers are great in a tortilla wrap ![]() ETA ~ after I posted this I see a recipe already like this except that I never put cream cheese in this - I'm totally trying that next time though - that sounds YUMMY!
