Sweet Potato Chili

You need:
Two sweet potatoes cut into bite size pieces
bag of frozen corn
can of black beans
can of kidney beans
can of pinto beans
jar of favorite salsa
packet of taco seasoning

Mix all ingredients in a crock pot and cook on low for about 8 hours or until sweet potato chunks are soft. I usually add a little water to make it easier to mix. Serve with corn bread, sour cream, and cheddar cheese.

Okay, I only got through about 20 pages of this (and have already tried several of your recipes! Thanks!) so sorry if this is a repeat, but this is one of our favorites:

Reuben Chicken:

Ingredients:
As many chicken breasts as your family will eat :-)
1 large can sauerkraut
about 1/2- 1 cup thousand island or russian dressing
5 or so slices of swiss cheese
1 chopped tomato

Start with a layer of dressing on the bottom, layer ingredients in any order until you have used them all. Cook on low for 6 or so hours, high for 3 to 4. Add chopped tomatoes to the top during the last 5-10 minutes.

Serve over buttered egg noodles.

this sounds fabulous! think i could get away with it if DH hates cranberry?? Its my favorite and i wanna try this!!!

1 beef roast
add 1 pck of the following::
Onion soup mix
brown gravy
auju base
a 'dash' of Whisshire sauce
2 cans of cream of mushroom soup
cook on high all day
shred meat with a fork
turn crock pot to low or warm
add in one brick of softened cream cheese
stir in till melted
serve with rice noodles or potatoes.

TURKEY CHILI

1T olive oil
~1# ground turkey

Saute until cooked through. Drain and then add to the crockpot along with:

1 can Rotel tomatoes with green chilies
1 small can no-sodium tomato paste and 1 can of water
1 can kidney beans, drained and rinsed
1 can great northern beans, " " "
1 can black beans, " " "
2 cups frozen corn
1 4oz can green chilies, chopped (or less)
1 med-large onion, chopped
2T chili powder
1t red pepper flakes (or less)
1t garlic powder
1/2 t cumin
1/4-1/2 t black pepper
1/4-1/2 t allspice

LOW 8 hours; HIGH 3-4 hours. You might want to add some extra water.

Garnish to taste...shredded cheddar, sour cream, tortilla chips or corn chips, olives, lettuce.

I have added chopped mushrooms and red bell pepper in here as well as other vegetables, but I just love the simplicity of only chopping an onion for this recipe. My sometimes-sensitive kids like this "as is" but you might want to decrease the peppers for your family.

Here's another Cafe Rio Pork recipe, a little different.

Cafe Rio Roast Pork

Large Pork Shoulder or Butt Roast
1 can of coke or pepsi (not diet)
2 cups of packed brown sugar
1 16 oz. jar of Salsa (I used Pace Chunky Medium)
cook all day in crock pot...shredd & eat!
Mmmmm Good!

**SHREDDED CHICKEN**
Put 1 lb. of boneless skinless chicken
Pour your favorite salsa over, enough to cover.
Wait a few hours & shred up with two forks. YUMM!

What I do different. Instead of one can beer I use 1 can Pepsi. I don't add the cans of green chillies. I also add 1 can cream corn, 2 TBSP of 3 Onion Dip mix from Epicure. And I don't crush the taco chips, I use them to dip. I also make 1 1/5 cups rice to mix in with it.

What you need
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)
------------------------------
1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
