I use mostly boneless,skinless chicken thighs..Cheaper Anything w/o bones really.You can add as much veggies as you like..Onions,spinach,mushrooms,peppers.I kinda throw any of those hanging around the fridge in the crockpot.Or not LOL 2 cans of tomatoe paste or a large can of crushed tomatoes.Add 1 cup water.Add more water as cooking if it's looking to thick,you want a nice thick,rich sauce but not stiff. Oregano Garlic Just boil up some type of pasta and bam dinner is served..

This isn't really a recipe or anything, but it's what made me start using my crockpot again. I am gone from the house for too long to start the crockpot and leave it until I get home. So now I use an outlet timer, like for Christmas tree lights, that way I can set it for whenever I want it to turn on. It's awesome!

my SIL does this for all of her parties. (very so cal -lol)
a large pork roast pour a jar of salsa on it cook.....(whatever-all day...) makes awesome burritos and tacos. she puts out the works. i have done it and frozen the leftovers and they freeze well. i make an awesome white bean soup. no recipe so let me sit down and think about it... also thought i would mention that the taco soup back on page 4 or 5 is one our my familiy's faves. DH had it at a potluck and brought home the recipe. i would have never thought to bring a crock pot to a potluck. we now bring nachos in a crock pot to most potlucks. they go like crazy! I use 12 oz total of beans, our faves are light kidney beans, dark kidney beans, black beans, and pinto beans and Hot Italian sausage. I always forget to add the corn and celery but I do add about 1/2-1 bag frozen corn. Dh has requested we add pasta next time to it so we probably will but it's oh so good and filling!

This is a family fave -
Apricot Chicken - I make it in bulk, and then serve it as leftovers or freeze for another night - 6 - 8 boneless, skinless chiken breasts (although this works with legs and thighs too!) Cook them in the crock from 3 hours on high or 6 hours on low. With one hour left to cook, drain off the water from the cooked chicken and dump it, mix 1 packages lipton onion soup mix, 1 jar apricot preserves (also works with pineapple or peach preserves or a can of cranberry sauce), 1 bottle of catalina dressing (although I use low fat Ken's Honey French too!) and pour over chicken. Cook for another hour. I serve it over rice or just with mashed potatoes and a veg.
