I'm so glad I found this thread! I bought a crockpot awhile ago but never use it. These recipes made me want to pull it back out

Chicken breasts, 4-6, 3 cans diced tomatoes with green chiles, or 2 with green chilies 1 without if you want less heat, about a 1/2 cup of smooth P and B. Cook on low 7-8 hours until chicken is done. Serve over rice, super yummy!

Super-Easy Chicken Taco Soup
3 chicken breasts
1 sm bag mixed veggies
1 packet taco seasoning (I will only buy msg-free!)
water to cover

Cook all on low 5-6 hours. Shred chicken and return to crock. Some people like to wait till halfway thru to add the veggies, but mine never get mushy.

Serve with tortillas/ sour cream/ etc.

There is a famous restaurant in Ponca City, OK that serves this- I hacked the recipe after dh took me there a few years back.

Spice Rub Crock Pot Chicken

1 5-6 lb free range organic chicken - giblets removed, rinsed, and patted dry with paper towels

1 white onion sliced

1 tsp sea salt (optional)

2 tsp paprika

1 tsp cayenne

1 tsp white pepper

1 tsp poultry seasoning

1 tsp garlic powder

Cover the bottom of the crock pot with the sliced onions. Mix all spices in a small bowl and then rub the spice mixture all over the whole chicken. Place the spiced chicken on top of the onions in the crock pot, cover and cook on low for 5-6 hours (depending on your crock pot). No need for any liquid, the chicken will cook in it’s own juices. Make sure you spoon the onions and a little bit of the juices over the chicken when you serve it. I served my chicken with our favorite brussel sprouts, steamed for 5 minutes and then sauteed with a little olive oil, dried dill, garlic powder, and pepper.

Salsa Chicken

3-4 chicken breast halves (frozen)
2 cans corn, drained
2 cans black beans, drained
1 block cream cheese
2 cups Salsa (more or less to taste, just makes sure the whole mixture covers the chicken so it doesn't dry out while cooking)

Cook on high for 8hrs (4hrs if chicken is not frozen).

Ok, ya'll. Call me stupid but I never realized you could slow roast a chicken in the crock pot. I'm just sorry that I've been missing out on it all these years!!
