I find I hardly use my slow cooker, even though I love it. It makes things so easy, but I never get it started in time.
If you don't know where to start I recently found "slow cooker kits" ready to throw in at Fresh and Easy. They aren't that cheap as you are buying a roast and everything, but it's a start. ![]() Brianne |

Easy Create-Your-Own Chili
1 lb ground beef, turkey, buffalo, or any meat, browned in a pan (optional, can be vegetarian) 1 chopped onion 1-2 chopped peppers, any color 1 small can of tomato paste 1 jumbo can (or two small) of tomatoes, chopped, diced, whatever 3-4 cans of beans, any kind but two colors are nice, usually kidney and black or red Cumin, paprika, oregano, basil, and/or chili seasoning to taste, usually 2-3 tablespoons Salt to taste (I usually add at the end) This is the basic idea, you throw all this in the cooker and let it go all day. I like to use up my extra hard veggies that have been sitting around. I've used with great success: - diced sweet potatoes and regular potatoes - diced winter squashes - diced zuchinni, add it after a few hours to keep it firmer, or not Its easy to buy the canned goods you need and keep extra on hand. Soda Roast!!
Dry rub all over the roast one can of dr pepper, coke, pepsi, any dark soda one medium onion two jalepenos put everything into a crockpot, cover roast with water and cook low til done. Mine have always come out super juicy and sweet!!! |

To whomever posted the salsa crockpot recipe, I made it a couple of weeks ago (though not in the crockpot because it was getting late) and it was delicious! Maybe I'll try it in the crockpot today

One of my favorites, from the Food Network site. I use smoked paprika instead of the chipotles, and it's awesome!
Slow Cooked Pork Tacos with Fire Roasted Tomatoes and Pickled Onions Ingredients For Pork: 1 yellow onion, roughly chopped 2 garlic cloves, crushed 1 (15-ounce) can fire roasted tomatoes 1 to 2 chipotle peppers, roughly chopped 2 tablespoons Worcestershire sauce 1/4 cup chopped cilantro leaves 4 to 5 pound pork shoulder 2 teaspoons salt 1 teaspoon freshly ground black pepper For Pickled Onions: 1/2 cup white vinegar 2 tablespoons sugar Pinch red pepper flakes 1 teaspoon kosher salt 1 red onion, thinly sliced 1 teaspoon dried oregano For Tacos: 24 corn tortillas 1 small green cabbage, shredded 2 avocados, peeled and thinly sliced Pickled red onions 1 (16-ounce) container sour cream Chopped cilantro leaves, for garnish For Pork: Directions To the sleeve of a slow cooker add onion, garlic, tomatoes, chipotle peppers, Worcestershire sauce, and cilantro. Add pork and season with salt and pepper. Cover and slow cook on high for 4 to 6 hours until tender. For Red Onions: In a small saucepan over medium heat, add vinegar, sugar, red pepper flakes and salt, heat until sugar dissolves. Remove from heat and add onions and dried oregano. When mixture is cool pour into a quart container. You may need to add a bit of water just to cover. (Keep at room temperature for about 6 hours then place in the refrigerator. Remove pork from slow cooker and shred using 2 forks. Toss with 1/2 cup of the liquid from the slow cooker. To serve place 1/4 cup of the pork on a tortilla, top with cabbage, avocado, onions, sour cream and cilantro. Repeat with remaining ingredients. |

I adjust it the following way: 1/4 C. diced (jarred) jalapenos (ONLY WHEN I DO NOT MAKE FOR THE KIDS OR I CAN MAKE TWO SMALLER LOAVES) 1/4 C. diced g.pepper 1/4 C. diced onion (I used spring onions from garden) 1 Lg egg, beaten 3/4 SLEEVE (about 1 cup) Ritz Whole Wheat pulverized in food processor 1/2 C. Sweet Baby Ray's BBQ 1 pkg McCormicks Meatloaf mix/seasoning I mix beat the egg, add the BBQ, mix, then stir in the veggies mix with meat then add cracker crumbs and mix with meat...form into a oval roll up aluminum foil in cigar shaped rolls and put on bottom of slow cooker if you do not have a rack and place meat on top so the loaf doesn't sit in the grease and get soggy...I also put 1/2 can of tom paste on the top of the meat after it's in the slow cooker....just tried this today, will update when I can to tell you how it tasted...

TACO SOUP! So delish... and easy!
1 lb. ground meat 1 yellow onion 1 bag frozen corn 1 small can diced tomatoes 1 can garbanzo beans 1 can kidney beans 2 cans kidney beans 1 packet taco seasoning 1 packet ranch dip/dressing mix Brown the meat and saute the onions together. Drain. Put the meat at the bottom of the crock pot. Pour on the taco seasoning and the ranch dip mix. Pour in all of the beans with their juices. Pour in the diced tomatoes. Pour in the corn. You can put it on high for 3-4 hours or low for 6-7. Serve with cheese and tortilla chips! SO good :] Enjoy! |

The easiest I've made:
Pulled chicken BBQ sandwiches. Put 3-4 chicken breasts, boneless, skinless into the crockpot, cook on low until the chicken has no more pink, drain the liquids, add a bottle of BBQ sauce and let simmer on low for as long as you can; the longer the better!! So easy! |
