My boyfriend is interested in making some stuffed pasta shells, but he doesn't like tomatoes. Does anyone know of any alternative sauces to use other than a tomato-based sauce? I suggested alfredo, but he says that he wants something colorful, so it's not all white....

Stuffed Cannelloni could be substituted with shells. I saw this recipe on TV a few weeks ago and it looks YUMMY!! Good luck!! You can also find a cannelloni recipe with a cheese or chicken filling and use this same sauce instead of tomato sauce!!

I've done a four-cheese sauce (got it off the back of a box...don't have the recipes) that was really good. You could add red/green bell peppers, broccoli/cauliflower/carrot mix chopped up really well. Really any veggie that he likes you could chop up really small and use. Corn, peas, whatever....
